James Mullis experienced his first malasada at the age of six. Somewhere between the sugar-dusted dough and deliciously filled center, he fell in love. But to James, malasadas were more than pastry perfection, they were reminiscent of what he loved most about his home: welcoming and diverse. Hawaii is a melting pot of culture, pulling culinary influence from the Philippines, Japan, and Portugal. At the age of 21, James left his home in Hawaii for Huntington Beach, California in hopes of bringing the unique flavors he grew up with to the West Coast. The pursuit of his dream proved to be an arduous process of trial and error, but James knew compromising was not an option. He spent his time vetting and assembling the perfect team of chefs who understood and shared his passion. After years of research, James put together a duo of illustrious chefs, Lincoln Carson and John Park. Today, he proudly presents Fill, an ode to Hawaii and the embracing culture that shaped his childhood.
With nearly 30 years of experience, award-winning pastry chef Lincoln Carson is recognized as an innovator and industry leader, having been featured in worldwide media outlets including New York Magazine, The New York Times, and Food and Wine, and has appeared on Iron Chef and other Food Network challenges. He has contributed to several books including The Modernist Desserts and Neo Classic Desserts, and was named a “Top Ten Pastry Chef” by Dessert Professional. Lincoln joins the Fill team as the consulting pastry chef. Using his considerable pastry talent, Lincoln crafts authentic malasadas, fillings, and scratch-made ice cream guaranteed to leave guests wanting more.
For over fifteen years, John Park has devoted himself to mastering his craft while boldly reinventing how dessert is experienced. He sees potential in a product and dedicates his culinary artistry to its unique success. Having been part of notable establishments such as The Ritz-Carlton and Father’s Office, and studying under master Chefs Jordan Kahn and Sang Yoon, John has cultivated an eclectic blend of experiences. Over time, he has become renowned for his creative ideas and high standards. John has now joined forces with Fill to bring Southern Californians a unique culinary experience that showcases his mastery of the sweet treat.
